SAUCES |
PAULA'S HOT SAUCE (Nancy Milne)
1 large can tomatoes, drained (reserve juice)
1 onion, chopped
1/8 tsp garlic powder
2 to 3 hot peppers*
salt and pepper
Puree in the blender, leaving slightly chunky. If needed add reserved tomato
juice to thin.
*for mild sauce use sweet banana peppers or pepperoncinis.

SWEET AND SOUR SAUCE
1/2 brown sugar
2 tsp. soy sauce
1 tsp bouillon mix (or 1 cube)
2 Tb. cornstarch
1 cup water
1/2 tsp. salt
3 Tb. vinegar
1 1/2 cup pineapple juice (or 1 can crushed pineapple)
Mix brown sugar, soy sauce, bouillon, and cornstarch in pan. Add remaining ingredients. Cook stirring constantly until thick.

TERIYAKI SAUCE
2 Tb. cornstarch
1/4 cup sugar
2 tsp minced fresh ginger (or 1/2 tsp ground ginger)
1/3 cup soy sauce
1 clove garlic (minced)
2 1/4 cup beef broth
In a pan, blend together cornstarch, soy sauce, sugar, garlic, and ginger. Stir in beef broth. Cook, stirring until thickened. (About 2 1/2 cups). Good marinade, dip or sauce.

OUR FAVORITE ALFREDO SAUCE (Shellie Uptain)
2 Tb. margarine or butter
2 Tb. flour
1 1/2 cups cream or half and half
1/3 cup parmesan cheese
dash garlic powder
dash nutmeg
Melt margarine, stir in flour, cook until smooth and bubbly, stirring constantly.
Gradually stir in half and half, cook until slightly thickened, stirring
constantly. Stir in cheese, garlic powder and nutmeg. Serve over cooked pasta.
White sauce is easy to make in the microwave, it doesn't burn as easily.

MOM'S GRAVY
Pan drippings from roast
1 cup water
2 Tb cornstarch dissolved in 1/2 cup water
Kitchen Bouquet browning sauce, if needed
Salt and pepper
Add water to roasting pan and boil together; salt and pepper and add Kitchen Bouquet if more color and flavor is needed. Stir in cornstarch dissolved in water; cook until thick.

MOMS CHOCOLATE SYRUP (Mom)
1 1/2 cups sugar
1 cup cocoa
1 cup water
pinch salt
Mix together and boil until all is dissolved. Use over ice cream or to make
chocolate milk or hot chocolate.
Mom made this all of the time when we were kids, it was years before I
knew you could buy it.

OUR HOMEMADE PANCAKE SYRUP
2 cups sugar
1 cup water
pinch salt
pinch cream of tartar (optional)
-Boil together and add:
1 tsp maple extract or
1 tsp cinnamon (my friend, Mary Ellen) or
1 tsp lemon extract (Mom)

CARAMEL SAUCE
3/4 cup brown sugar
1 1/2 cup water
1 Tb cornstarch
1 Tb butter
Cook together until thick. We use this for Carrot Pudding.

LEMON SAUCE
1 cup sugar
2 Tb cornstarch
2 cups boiling water
Juice and zest of one lemon
Mix sugar and cornstarch together. Add the rest of the ingredients and cook until it thickens.

HONEY BUTTER
1/2 cup butter, softened
1/3 cup mild-flavored honey
Blend ingredients and refrigerate. It will separate so stir before serving.
Some recipes add a raw egg to keep it from separating.

HONEY PEANUT BUTTER
1 cup peanut butter
½ cup butter, softened
½ to ¾ cup honey
Cream together.
